Menu by Chef Tong
The aim is to create a unique environment in London where customers can experience authentic, healthy and modern Peking Duck. By reviving and modernising recipes, Chef Chee Hwee Tong will create unique duck menus that tell the story of China and celebrate the true diversity of modern chinese cuisine.
The Menu is inspired by Peking Duck culture. It embraces seasonality and sustainability, whilst encouraging a healthy balance obtained by the food we consume during each season. The intent is to achieve a Michelin Star.
